Looks wonderful!! Great garden!!!! Color does not drain as bad from your beets when you boil if you leave the greens on or at least a good length of stems...also do not peel before you cook!;-)
What a harvest! I'm hungry! I made the best tomato pie in the world, according to my husband. You use a pillsbury pie crust. Roll it out about 2" wider than it is already. Alternate in a circular pattern, tomato slices and slices of mozzarella cheese. I also added onion strips, and fresh basil. Add sea salt and coarse pepper. Fold the edges of the dough up over the edges of the tomatoes, etc... Then sprinkle olive oil on everything, especially on the crust on the edges. Bake about 30 minutes at about 450 degrees. Yum!!
