Harvest

Tomatoes of assorted shapes and sizes.

Beets and potatoes.

Carrots (and a couple of baby parsnips - not quite ready yet).

Color does not drain as bad from your beets when you boil if you leave the greens on or at least a good length of stems...also do not peel before you cook!;-)

What a harvest! I'm hungry! I made the best tomato pie in the world, according to my husband. You use a pillsbury pie crust. Roll it out about 2" wider than it is already. Alternate in a circular pattern, tomato slices and slices of mozzarella cheese. I also added onion strips, and fresh basil. Add sea salt and coarse pepper. Fold the edges of the dough up over the edges of the tomatoes, etc... Then sprinkle olive oil on everything, especially on the crust on the edges. Bake about 30 minutes at about 450 degrees. Yum!!

What a wonderful harvest! You need some green jeans to go with your green thumb! And that recipe that Julia posted above for the tomato pie... OH MAN! I need to make that!
